While there is free water in the rice the pot stays near boiling point; once the water is absorbed the temperature rises past a threshold, the magnet releases and the cooker drops to warm. That is the whole mechanism, and nearly every complaint traces back to it.
When rice is undercooked and the cooker switches to warm too early, that thermostat is usually reading a temperature that is not real. The most common cause is not the thermostat at all but the contact between the pot and the plate: a grain of rice, a scale deposit, or a pot base that has warped so it no longer sits flat.
